Chicory with garlic and hot chilly pepper is a typical dish from the Lazio region.
Here we propose a new version with fresh ginger root which stimulates digestion.
Cleanse and wash the chicory. Shortly blanch in boiling water and drain.
Fry a clove of garlic in olive oil and add the chicory with some of its water. Salt and scatter with fresh shreded ginger root. Cook until the water has dried stirring from time to time.
